If you want it tasting great try grilling it on indirect heat for about 3 hours then finish it by searing the outside. If you like med rare the whole roast is med rare (even the outside edges)
Prime Rib Roast Grilled lngredients 1 4lb bone-in prime rib roast 3 tbsp coarse sea salt 2 tbsp olive oil 2 sprigs rosemary, leaves pulled from stems and coarsely chopped Rinse your roast under cold water. Pat dry with paper towels and place roast on wire cooling rack. Salt all sides of the roast with coarse sea salt and place in the refrigerator for 3 days. Preheat your grill to 225-235 degrees. While the grill is preheating, prepare your prime rib by applying a light coat of olive oil over the entire roast. ln a mixing bowl, whisk together all ingredients for the beef rub. Apply liberally over the entire roast. On top of the beef rub, sprinkle chopped fresh rosemary. Allow roast to sit on the counter and come up towards room temperature while your grill preheats. lnsert a reliable meat thermometer in the roast, place roast on grill over indirect heat, as far from the heat source as possible. Be sure to place the roast with the bones facing the heat source. When the internal temperature reaches t22 degrees (about 2 hours), remove the roast from the grill and set aside. lncrease the direct heat zone of your grill to extra-high Place the roast directly over high heat for a total of 5 min, turning often so that all sides get a nice crust build up. remove roast and tent with foil for about 10 min. DELICIOUS! |

Check Fresh Market. Order it on a day when on sale perhaps. We are impressed with their meat department. Costco is another thought.
We start the roast with a sear and reduce the temperature. |

The last time we had a prime rib roast, which I found at Publix Magnolia Plaza only two months ago, I smoked it till medium rare and it came out great. Low (225) and slow (35-40min/lb) in my opinion is the way to go. Internal temperature for medium rare about 135.
PS…. I’m the “inspector” in this area so when you get it all done I’ll be over for dinner….lol |

Try the butcher in the Sawgrass Market. They have some impressive cuts of meat but don't come cheap. I've never bought there but it's fun to look at.

Get in a first name basis with your butcher at your grocery store. They are happy to help you get the finest cuts of meat.
With that said, your butcher at Fresh Market, Publix or Winn Dixie will absolutely get you a nice center cut rib roast upon request. Give them two weeks notice. |

That store is under relatively new ownership, and things have changed. I bought 2 rib eye steaks, and 2 T-bone steaks there that were the absolute worst cuts of meat I ever wasted money on. I won't be going back.

Winn Dixie will order a 2 or 3 rib roast anytime and Fresh Market usually has them and they have better prime meats

You are correct that Premier is not Prime. But, I buy USDA Prime filet mignon steaks at the Colony Plaza Publix location on a regular basis. I have also bought it at the Lake Deaton location. It is under their Greenwise label, and it is not always in stock, but when they are, I buy them and freeze them. It is not Premier, it is labeled as USDA Prime, and the cost is about $28 per pound. They also sell Premier at a much lower price. As far as I know, Premier is not even a USDA grade for beef. Publix also sells USDA Choice beef, but I always look for the USDA Prime label. You can also buy Prime beef at Sam's Club, but it is not as good as the Publix beef.
