Default Finally! Low Glycemic Index Pasta

Found this in Publix yesterday
The Villages Florida
Made Chicken and Broccoli Alfedo tonight. The Villages Florida

I've been losing weight on the South Beach diet and haven't had pasta in quite while. I was so excited to find this. It was a real treat.

Hope you enjoyed! Might be something our diabetic friends would enjoy, too.

So I'm thinking that was probably more than a serving??? which is probably like 1/2 cup!!! It does look delightful - was the pasta good or gooey?

Just curious - is it whole wheat pasta?

I think they've had this for awhile. I also used to purchase it up north b/4 we moved here. Not sure how this would figure in to gluten-free though. Does the box say??

It doesn't have inulin and it doesn't say anywhere that it low calorie. It has a low glycemic index. It contains several different kinds of fiber, wheat fiber, fruit fiber and wheat gluten all of which slow the absorption of sugar. It decreases the excess secretion of insulin caused by high glycemic foods.
You don't have to buy it or eat it if you don't want to.

Sorry, it does contain inulin which is a vegetable fiber.

Sorry we are all raining on your parade - I for one think it could be an awesome product and will be trying it myself. Anything that is lower on the glycemic index is a friend of mine.

I'm for it!! I have an unhealthy skepticism trying to avoid being the sucker born every minute....

Inulin is a natural vegetable fiber, as Dr. WOB says. wikepedia has a nice, hopefully accurate article on the benefits. Like psyllium aka Metamucil, it is not digestible, but give a starchy sweetness to food.

I'm all in for inulin and apologize for dissing it earlier. It is a polymer, but a natural and apparently safe one. Next time I make pasta for a crowd I'll use it.

Eat on Dr. Boogie and enjoy!
