Ground beef tetrizini or ground beef stroganoff.
I'm not much of a typist, you'll have to look it up yourself.

Default Tamale Pie

One of my favorites that I made before it was saw it in magazines:

Brown the ground beef in a little oil. Break into pieces as it browns.
Drain the grease into a can and toss.
Mix in a small can of tomato sauce and a package of taco seasoning with the ground beef
Add a small can of drained Mexicorn
Stir well and put into a 8X8 square aluminum pan.
Take a package of corn meal mix and prepare as directed. Stir in a can of El Paso Jalapeno chilies. I use the juice in the can to supplement the water that they add to the corn meal mix to make the topping spicier.
Spread the corn meal mixture on top of the ground beef mixture.
Bake for 12-15 minutes at 350 degrees.
Cut into squares and serve and eat.

this is a very flexible dish - you could add other vegetables (peas?) and more seasonings - we have used Mrs. Dash sometimes
Thanks so much!

WOW! This. Sounds great. This thread has great ideas. I also like to throw a handful of shredded cheese in my cornbread. This will be on the menu this week.

Default Here's another

I call it "Mexican Pizza." Very quick.

Brown ground beef in skillet, drain fat, add envelope of taco mix and whatever water they suggest, simmer until not soupy (usually about 5 minutes).

Heat soft taco shells (we like whole grain or some kind of upgrade - like tomato basil or whatever) on both sides in a non-stick skillet with a little Pam sprayed. Doesn't take long - maybe 30-60 seconds per side.

Put taco shells on a foil covered cookie sheet, spread with taco meat, add chopped green onions, green and/or red/yellow chopped peppers, chopped tomatoes (have used drained canned tomatoes when desperate) and top with grated cheese - stick in oven for 5-10 minutes at 350-375 until cheese melts and serve. Could add other veggies if desired also.

You kind of need to eat it with a fork if you are not eating alone - kind of messy, but good. Can also cut it in fourths and attempt to pick up and eat like pizza.

Coming on this thread late but thought you may like this soup recipe that we call in my neck of the woods Venus de Milo soup after the local restaurant named Venus de Milo that created it.

1 lb lean hamburger
1 medium onion chopped
1 clove of chopped garlic
1 small can of tomato paste
1 can of beef broth
3-4 quarts of water (less if you like soup thicker more for thinner)
2 beef bouillon cubes
1 tsp of Italian seasoning
salt and pepper to taste
1/2 box of Orzo pastine
2 cans of Vegall drained
Your favorite grated cheese
2 tblsp olive oil for browning hamburger

Directions:

In a good size soup pot brown hamburger and when almost browned throw in the chopped onions and garlic and saute them for a few minutes. Add liquids, tomato paste, Italian seasoning, bouillon cubes, and Vegall and simmer the time it takes to cook the Orzo in a separate pot. When Orzo done cooking drain and add to the soup. Add grated cheese when serving and crusty Italian or French bread completes this meal. Enjoy

Tater Tot Hotdish:

Put the hamburger (un cooked) on the bottom of a square casserole dish (FYI a casserole is like a hotdish that is served outside of Minnesota)
Open a can of Campbell's cream of mushroom soup (WHAT do you mean you don't have a can of Campbells cream of mushroom soup? How can you make green bean, mushroom and onion ring ?) Uffda

Spread the can of soup evenly over the hamburger.

Open (with either hand) a bag of frozen Tater Tots. Evenly layer the tots over the mushroom . Bake the tater tots per the instruction on the tater tots.

When the tots are golden brown (NO sampling) the masterpiece will be complete.

PS you may to employ additional security to defer the unplanned dinner guests.

Wonderful new ideas and new words. "Hotdish"...a new word that means the same as casserole. Another word I learned that is the same as Potluck? "Pitchin"...often used if you are from Central Indiana.

AND when I moved here I found a lot of folks from New York City hadn't ever been to a Potluck or a Pitchin. We are all alike only different.

Love your humor too BruiserI.

Hate to admit it, I've never been to a potluck. It sounds like an easy way to entertain and fun.

I always associated potlucks with church stuff and I'm really not so much into church.

If you like cabbage, this is sooo good and easy. You can make a big dish of this and freeze as much as you like.
QUICK UNSTUFFED CABBAGE
1 head of cabbage chopped into medium pieces
1 lb ground beef
1/2 cup chopped onion
1 T + 1/3 c raw rice ( not instant)
1//4 tsp pepper
1/2 tsp salt
2 cans condensed tomato soup
1 1/2 cups water
1/4-1/2 cup grated Parm or Italian Cheese
Grease 9x13 dish/pan. Spread cabbage on bottom of pan. Brown meat and onion. Drain and stir in rice, salt and pepper. Spoon over cabbage. In saucepan heat soup and water to boiling and pour over mixture in pan. Sprinkle with cheese (I have added more cheese if I didn't think it covers- the cheese layer is ABSOLUTELY NECESSARY AS I HAVE TRIED IT WITHOUT AND YOU CAN'T ELIMINATE IT!). Cover tightly with foil
bake for 90 minutes at 350. Let sit 10 minutes when it comes out of oven.
